Curried Lentil Soup with fresh French Tarragon
  • Shallot
  • Garlic cloves
  • Carrots
  • Celery
  • Chicken stock
  • Lentils (pre-cooked)
  • Sweet yellow curry powder (at least 2 tbsp)
  • Fresh ground pepper
  • Chipotle pepper flakes (how smokey do you want it?)
  • Cumin
  • Coriander
  • French Tarragon (coarsely chopped and added in towards the end of cooking)
Immersion blender is my best friend for this soup. It would still taste amazing without being blended, but the smooth texture it produces make it so comforting and decadent. I plopped some feta on top because I was too lazy to walk to the store for some crème fraîche, but next time I’d make the effort as the feta makes the soup a bit clunky.
